This is cider with a soul—dry, bitter, and bold in all the right places. Made with a high concentration of heirloom and true cider apples, this throwback to America’s OG dry cider gets aged on the lees for 10–12 months and lightly carbonated for that perfect tightrope walk between finesse and grip.

Think crisp orchard fruit, a spine of robust acidity, and a bitter backbone that keeps you coming back for another sip. Fermented in stainless, aged in 80-year-old chestnut barrels, and bottled with minimal sulfur—no fluff, no shortcuts.
Made by Peter and Susan Yi in Bushwick with fruit from their sustainably farmed 200-acre orchard in New Paltz. Inspired by Basque cider traditions, this is American cider
